Method

Mix the meat , onions, garlic balsamic and salt and pepper together..don't worry if the onions are a bit unruly, it will be just a bit more obvious that you made your own burger.Press into a 2 cm thick patty, drizzle with the oil and cook in a hot pan, chargrill or barbecue with for 5-6 minutes on each side till you get a deliciously beefy crust on the meat.

1. To make the red onion marmalade, place a medium-largepot over a low heat, add the butter and when it starts tofoam add the onions and garlic and sweat slowly for 10minutes. Add the rest of the ingredients and cook slowlyfor a further 15 minutes until the mixture becomes thickand syrupy. Then remove from the heat and set aside.

2. Heat the barbecue or griddle pan and chargrill theburgers for 10 - 12 minutes or until cooked through.

3. Lightly toast the buns. Place the burgers on the buns, topeach burger with a slice of cheese, a spoon of red onionmarmalade and a spoon of sour cream, and finish with afew leaves of spinach.

Tip: To make lovely oven fries, peel and cut potatoes intowedges. Boil for 10 minutes, drain and dry thoroughly.Roast in a hot oven on a pre-heated tray, drizzled witholive oil, salt and pepper and fresh rosemary for 20minutes, turning once or twice during the cooking.
