Penne Pasta with Roasted Cherry Tomatoes
- Half tomatoes depending on their size. Finely chop onions. Separate garlic but do not peel. Drizzle olive oil on a baking tray, spread the prepared vegetables and season with salt and pepper, sprinkle with herbs and more olive oil. Bake in a pre-heated oven at 200°C for 20 minutes.
- Meanwhile, cook pasta in boiling salted water. Peel the orange removing the white inner skin. Drain and crumble feta cheese. Chop up capers and mix with cheese and orange.
- Drain cooked pasta. Remove herbs from baked tomatoes, remove skin from garlic and crush. Toss together baked tomatoes and pasta, add a drizzle of water from the pasta if necessary.
- Serve with feta cheese and side salad.
